Red ruby water chestnuts in coconut milk.  This is a popular dessert in Thai restaurants. Sweet, fragrant and very refreshing. Perfect desserts to cool down after a hot and spicy Thai meal. The small reddish/pinkish jewels are water chestnut covered with tapioca flour, served with sweeten coconut milk and shaved ice. Indescribably delicious and I wish I could have more jackfruits.
